I’ve eaten the green veggie all my life.
One of my first memories:
London, Ohio- the farm, I’m 4-years-old. Grandma and I are sitting on our large plantation-like porch eating a fresh cuke from the garden.
It’s quiet and peaceful, save for the occasional car going by on old Route 40. There’s a light summer breeze and the birds are singing.
Suddenly a screeching alarm goes off.
Another one has escaped.
An inmate from the federal prison, a half mile down the road, has gotten out again.
The escapees would often hide in our corn fields.
Time to go back inside, lock the doors and stay safe until we get the all clear.
Gosh, I loved Grandma. She was so jovial and happy. And she loved a good joke. When she laughed, she’d turn bright red and tears would stream down her cheeks. Everyone loved Grandma. So, it’s probably no surprise that I grew up loving everything she loved.
Here are just a few reasons I’m grateful Grandma relished her cukes.
1/High in antioxidants
3/High in nutrients
4/Helps in weight loss
5/Lowers blood sugar
But wait there’s more. I read a study once that said something else interesting. Thousands of people were polled and those that were the healthiest and fittest had one thing in common: All of them had cucumbers in the refrigerator.
Do you have cucumbers in your ‘fridge today?
I’ve included a simple recipe in case you want add a little spice to your cukes.
